Cheesecake
In honor of the upcoming 'milchige' holiday, we will present an innovative, simple and delicious idea: a basic cheese cake with four optional toppings for you to choose from! Each topping gives the cheesecake a unique taste and appearance.
Basic Cheese Cake:
For Base:
50 grams (1.8 ounces) granulated sugar
100 grams (3.5 ounces) margarine
150 grams (5.3 ounces) flour
1 egg
Mix all ingredients until you have a smooth, soft dough. Spread out the dough in a 24x26 centimeter (10x20.2 inch) baking form and bake for 10 minutes until slightly browned.
Cheese Layer:
1 container sweet cream
2 tablespoons sugar
500 grams (17.6 ounces) white cream cheese
1 container sour cream
¾ cup sugar
3 eggs
2 tablespoons corn flour
Whip the sweet cream with 2 tablespoons sugar. Gradually add the rest of the ingredients in the order listed until you have a smooth mixture. Pour the cheese mixture onto the base and bake for one hour and ten minutes on 180 C (350 F).
Let cool completely.
Orange Topping:
¾ cup fresh orange juice
½ teaspoon lemon or orange zest
3 eggs
1½ cups sugar
100 grams (3.5 ounces) butter
On a low flame, cook the juice, the lemon zest, the eggs and the sugar until the mixture thickens. Turn off fire and add butter. Let cool and top the cake.
Red Berries Topping:
1 orange topping (see recipe above)
¼ cup strawberries or blueberries, crushed
To Assemble:
Prepare orange topping as described above, and after adding the butter, ass the berries. Pour over cooled cake.
